late St. Patrick's Day dinner.

I had tried to get a corned beef brisket before St. Patty's day.  Funny thing..... I seriously thought that  I would be able to get one the day before.  Duh.

Found one this past week.

We were having Matthew and Dr. Ana over for dinner last night so I decided to have a post St. Patrick's Day meal.

I started off with a curry cheese ball and crackers.  It was my first attempt at a cheese ball so it didn't look that great....... but, boy oh boy,  it was to die for!!!

For the boys, I made the brisket, brussel sprouts, baked potatoes, and a really yummy horseradish sauce.

For the girls I made a vegetarian Shepherd's pie.  I changed the recipe a bit and put cream cheese, and margarine in the mashed potatoes, and added a layer of shredded cheddar on top of the lentil mixture.  You can never have too much cheese.

The pie turned out runny (my mashed potatoes were to blame), but, it was delicious!  Having never made any of the recipes before, I was pretty happy with the outcome.

Gotta love using guests as Guinea pigs.
